Pork belly stuffed baked

Materials
1 pork belly 1 1/5 pound boneless
4 cloves garlic opened
salt
thick pepper
rosemary
1/5 kilo of potatoes
100 gr fresh butter
Olive oil 150gr

Execution
Wash and clean well the pancetta. Move off the bones, put some salt and pepper and put the chopped garlic and rosemary. Fold it and tie with string tightly roll the pastry with butter and sprinkle the outside with salt and pepper. Cut the potatoes in four pieces, put some salt and pepper and place the pan with the meat. Pour the oil and place the pan in the oven for 2 hours at 200 degrees, turning it regularly to cook everywhere.

Cock stuffed in the oven

Materials
1 rooster, 2 kg
500gr fresh chicken livers
60gr rice yellow
100gr oil cheese or pecorino
salt
pepper
oregano
2 cloves garlic, chopped
150 gr olive oil

Execution
Clean and wash the chicken thoroughly, inside and out and let it drain. If you have a gas stove put the rooster on the flame in order to burn all the small feathers that may have left on it. In a large frying pan place the chopped giblets and fry them for 15. Afterwrds pour on the pan some oregano, rice and oil cheese cut into small cubes. Route the rooster, the put salt and pepper internally and with one spoon filled the rooster with all the materials. With a small needle sew the hole in order not to come out after the filling and sprinkle with salt and pepper the outside place in the oven at 200 degrees for 2 and 1/5 hours. During the baking turn it in order to become golden brown on all the sides.
